Grown and processed in the same way as the prized Japanese senchas, this organic tea is cultivated in pure, rich soil with a high mineral content. Ilam Sencha is steamed rather than fired to create a distinctive, delicate tea. After the leaves are plucked, they are carefully steamed and then are processed in several distinct steps that include multiple rollings and drying. The leaves are shaped and shined, and the tea is dried and hand-sorted. The tea’s distinctive infusion reveals a bright, grassy flavor, notes of spinach and a satisfying roasted mouthfeel.
One heaping teaspoon of tea per 8 ounce cup. Cool boiling water for 3 minutes, then steep tea 1 - 2 minutes.
